My 1961 FLH 3000 miles on a fresh top end last few times I rode it the compression has increased quite bit. I am topping the scale at over 230 lbs. and struggle to kick it over when hot and not much better when cold. Any ideas what has changed Thanks if you can help

Can you give a description of the build you had done. Cylinder head work performed and parts used. Piston brand and part number. Camshaft being used.
Identification of these parts are relative to static compression ratio. If you know of cylinder head gasket machine work being done or cylinder gasket surface and/or base gasket surface please acknowledge.
230 PSI @ kicking RPM is really high for a 74 cubic inch Panhead. What brand compression gauge tester are you using?
Does this engine have factory hydraulic lifters in it?
Let's start here with getting to the bottom of your problem.

Measuring the compression would certainly be a clue, Idfly...
Usually problems go the other way!
Please beware there are many mechanical issues that can put a bind on other things than the motor, usually in the primary.

I believe I interpreted your message wrong???
I thought you meant that you measured your cranking pressure at 230 lbs. With a compression gauge. After reading Cottons comment, your referring to your body weight???
Either way, please supply information so the situation can be accessed and the issue diagnosed.
